Ingredients

6 eggs, beaten
3 tbsp Lactantia 35% cream
8 slices of challah or egg bread
1 tsp cinnamon
6 tbsp maple syrup
8 tbsp Black Diamond White Original Cheese Spread
2 tbsp Lactantia Cream Cheese Original
4 tbsp strawberry jam
4 tbsp Lactantia unsalted butter
to taste maple syrup

Preparation

  • Preheat oven to 350°F.
  • In a bowl, beat together the eggs and cream.
  • Sprinkle in the cinnamon and pour in the maple syrup, then let the egg mixture rest in the fridge.
  • In a second bowl, soften Black Diamond White Original Cheese Spread with a spatula and add in the cream cheese.
  • Place 8 slices of challah on a work surface and spread ¼ of the cheese mixture on 4 slices. Spread 1 tbsp of strawberry jam on each of the remaining slices. Create sandwiches pairing one slice with cheese mixture and one slice with jam and press them together.
  • Melt 1 tbsp of butter in a non-stick pan over medium heat.
  • Retrieve egg mixture from fridge. Place one sandwich in the egg mixture (let excess drain off), then fry it in the pan gently on both sides and place on a parchment lined baking sheet. Repeat with each sandwich.
  • Once all are complete, place the baking sheet in the oven for 15 minutes until heated through.
  • Tip: Serve with maple syrup and fresh berries; those who enjoy indulging in some sweetness, dust with icing sugar.

Crispy Bacon Cheddar Puff Pinwheels

Ingredients

4 bacon slices, chopped
¼ cup Black Diamond Original Cheese Spread
1 tbsp fresh thyme, chopped
2 tsp red wine vinegar
½ package (225 g) puff pastry
1 egg, beaten with 1 tbsp of water (egg wash)

Preparation

  • Preheat the oven to 350°F.
  • In a medium size sautée pan, cook the bacon until nice and crispy. Discard excess fat (store to dispose of later or keep to use when baking something savoury and bacony) and return the pan to the stovetop.
  • Add in the red wine vinegar and fresh thyme, stir, and remove from heat.
  • On a dry flat surface, roll out the puff pastry to a 10” x 10” square.
  • Spread Black Diamond Original Cheese Spread over the puff pastry leaving 1” from the top of the dough (be gentle, puff pastry can be delicate). Sprinkle the bacon atop and press in slightly.
  • Starting at the end closest to you, roll the dough up over itself into a log.
  • Brush the pastry with the egg wash and then cut into 1” pieces and place them on a parchment lined baking sheet.
  • Bake in the oven for 15-20 minutes until the pastry is lightly browned.
  • Take out and allow time to cool before devouring.
  • Tip: Flaky and flavourful, ensure napkins are nearby so guests aren’t left with flake-filled laps.

Chipotle Cheddar Pasta Crumble

Ingredients

454 g macaroni noodles, cooked
1 cup Black Diamond White Original Cheese Spread, softened
2 chipotle peppers in adobo sauce
2 cups Lactantia 2% milk
¼ cup Lactantia 35% cream
1 ½ tbsp all purpose flour
½ tsp salt
8 bacon strips, cooked and roughly chopped
½ cup breadcrumbs
6 tbsp fresh thyme
1 tbsp Lactantia unsalted butter, melted

Preparation

  • Preheat the oven to 350°F.
  • Chop the chipotle until it becomes close to a paste and set aside.
  • In a medium sized saucepot, melt the butter over medium heat. Once melted, stir in the flour until it’s entirely coated by the butter. Add in the milk slowly while whisking to avoid lumps. Add in Black Diamond White Original Cheese Spread, chipotle, salt, and cream, stir until fully melted.
  • In a large bowl, combine the macaroni with the cheese sauce and toss in ½ the bacon and ½ the thyme.
  • Place the macaroni mix in a 9”x11” buttered baking dish.
  • In a small bowl, toss together the breadcrumbs, remaining bacon, remaining thyme, and 1 tbsp of melted butter. Let this cascade over the macaroni to create delicious crumby crust.
  • Bake for about 30 minutes, until it’s hot and bubbly.
  • Let it cool a little before diving in.
  • Tip: To preserve the crispy crumb crust, serve directly from the baking dish, so keep that in mind when selecting.

Ingredients

454 g Burger:
lean ground beef
3 tsp cumin
6 tbsp Black Diamond Sharp Cheese Spread
½ tsp salt
2 tsp pepper
1 egg, beaten
¼ cup breadcrumbs
3 tbsp coriander, chopped
1 tsp pickled jalapeno, chopped
2 tbsp Spicy Mayo:
mayo
1 tsp chili powder
6 tbsp Black Diamond Sharp Cheese Spread
4 Garnishes:
rustic hamburger buns
4 lettuce leaves
1 tomato, sliced

Preparation

  • Set your BBQ to medium high and allow to heat up.
  • In a medium sized bowl, mix together the beef, cumin, 6 tbsp of Black Diamond Sharp Cheese Spread, salt, pepper, egg, breadcrumbs, coriander, and pickled jalapeno. Shape this beefy mixture into 4 patties and set aside.
  • Combine together the remaining Black Diamond Sharp Cheese Spread and chili powder until thoroughly blended. Mix in the mayo and leave this spicy mayo on standby.
  • Cook burgers on the BBQ and grill your buns. Once burgers are done to your liking, build them up with the lettuce, tomato, and spicy mayo. Serve with chips and salsa.
  • Tip: Sliders are adorable! Buy mini buns and make double the mini patties to have hamburger hors d’oeuvres.

Roasted Eggplant & Cheddar Dip

Ingredients

1 eggplant, halved
¼ cup Beatrice sour cream
½ cup Black Diamond White Original Cheese Spread
1 tsp cumin
¼ tsp chili powder
¼ tsp ground coriander
¼ tsp salt
¼ tsp pepper
2 tbsp olive oil
3 tsb lemon juice
3 tbsp &
2 tsp
fresh parsley, chopped

Preparation

  • Preheat oven to 375°F.
  • On a parchment lined baking sheet, place both halves of the eggplant flesh side up. Drizzle olive oil over each one and season with salt and pepper.
  • Bake for 45-50 minutes, or until the flesh is roasted and soft.
  • Once cooled, spoon out the flesh and place in a food processor. Add in the remaining ingredients and the 3 tbsp of fresh parsley and blend until smooth.
  • Garnish with 2 tsp of fresh chopped parsley and serve with toasted pita and cucumber slices.
  • Tip: Easily alter your eggplant dip by adding various garnishes; we suggest parsley, pine nuts, or pomegranates.

Ingredients

19oz can chickpeas, drained
½ cup Black Diamond Light Cheese Spread
2 tbsp tahini (sesame paste)
¼ cup freshly squeezed lemon juice
1 garlic clove, chopped
2 tsp cumin
¼ cup olive oil
¼ tsp salt
1 honey (optional)

Preparation

  • Place all ingredients except the olive oil in a food processor and start to blend.
  • Slowly drizzle in the olive oil while the mix is pureeing.
  • Scoop out of the processor and place in bowl ready to be dipped and devoured. Serve with toasted pita.
  • Tip: Peel garlic cloves and squish to open juices, rub them along toasted pitas to add a little extra.

Ham & Cheese Pita Pizza

Ingredients

4 Lebanese large flat pitas, approximately 12”
1/2 cup Black Diamond Original Cheese Spread
1 cup pizza sauce
2 cups Black Diamond Shredded Mozzarella
1 1/2 cups ham, cubed
4 tsp dried oregano
16 fresh basil leaves
2 tomatoes, seed and chopped

Preparation

  • Preheat your oven to 375°F.
  • Prepare 2 large pieces of tinfoil and set aside.
  • Spread 2 tbsp of Black Diamond Original Cheese Spread over each pita. Pour 1/4 cup of pizza sauce over the cheese and then sprinkle 1/2 cup of Black Diamond Shredded Mozzarella over top of the sauce. Divide the ham evenly amongst each pizza and scatter dried oregano.
  • Bake 2 pizzas at a time in the oven, directly on tin foil, on the upper rack for 10 - 15 minutes. Remove and allow them to cool while you put the remaining pizzas in the oven.
  • Garnish with fresh basil (chopped or whole small leaves) and chopped tomatoes.
  • Tip: For an added gastro garnish, drizzle thick balsamic syrup atop in fancy Pollock-like patterns.

Chicken & Bacon Spaghetti in Cheddar Sauce

Ingredients

454 g spaghetti, cooked
2 tbsp olive oil
2 chicken breasts, cut into ½” cubes
5 bacon slices, chopped
2 garlic cloves, chopped
¼ cup white wine
½ cup Black Diamond Original Cheese Spread
½ cup chicken stock
¼ cup Lactantia 35% cream
¼ tsp salt
¼ tsp pepper
3 tbsp green onions, chopped
3 tbsp fresh oregano leaves

Preparation

  • In a large non-stick pan, heat the olive oil over a medium heat.
  • Toss the cubed chicken breast into the pan and brown on all sides. Once cooked, remove the chicken and set aside.
  • Bacon’s turn; add it all to the pan and allow to brown. Get the garlic in there and sautée for another minute.
  • Pour in the white wine and let the liquid reduce by half.
  • Stir in Black Diamond Original Cheese Spread until it’s nice and melted. Follow this with chicken stock and heavy cream and allow the mixture to simmer for a few minutes.
  • Season with salt and pepper and add in the noodles, green onions, and chicken with all its glorious juices.
  • Toss all the ingredients in the pan until evenly coated.
  • Tip: Serve with sprigs of fresh oregano leaves as a garnish. This not only adds flavour but classes it up with a restaurant look.

Ingredients

1 cauliflower, broken into florets
3 tbsp Lactantia unsalted butter
3 tsp olive oil
1 carrot, peeled and roughly chopped
2 celery ribs, roughly chopped
1 onion, roughly chopped
1 potato, peeled and roughly chopped
8 cups chicken stock
3 tbsp fresh thyme
½ cup Black Diamond Sharp Cheese Spread
2 tomato, seeded and finely chopped
4 tbsp green pepper, finely chopped
3 tbsp coriander, chopped
6 tsp red onion, finely chopped
6 tsp red wine vinegar
2 tsp cumin
4 tsp olive oil
¼ cup Lactantia 35% cream (optional)
to taste salt and pepper

Preparation

  • In a large pot, melt the butter with the olive oil over medium heat.
  • Once the butter is liquid, add in the onions, carrot, and celery. Cook for a few minutes until the vegetables start to sweat, stirring frequently. Ingredients

2 eggs, beaten
¼ cup Lactantia 35% cream
½ cup Black Diamond Original Cheese Spread
2 tsp fresh thyme
1 tsp salt
½ tsp pepper
¼ cup pancetta, cubed
2 tsp red wine vinegar
1 pack of 12 3” mini tart shells

Preparation

  • Preheat oven to 350°F.
  • Place 12 mini tart shells on a parchment lined baking sheet and leave them to thaw.
  • In a non-stick pan on medium heat, place the pancetta cubes until they render their fat and crisp up. Stir in the red wine vinegar, then take the pan off the heat and set aside.
  • In a small bowl, whip together the Black Diamond Original Cheese Spread and the eggs, cracking and adding them one at a time. Whisk in the cream and add the fresh thyme, salt, and pepper.
  • Divide the pancetta evenly between the shells and then top up each shell with the egg mixture.
  • Bake in the oven on a cookie sheet for 15-20 minutes until the crust is nice and golden and the egg mixture has set. Allow tarts to cool for 15 minutes before serving.

Mexican Beef Pie with Cheddar Crust

Ingredients

½ cup Dough:
Black Diamond Original Cheese Spread, room temperature
½ cup Lactantia unsalted butter, room temperature
1 ½ cups all-purpose flour
¼ tsp salt
2 tbsp Filling:

1 lb ground beef
¼ cup red kidney beans

1 398 ml can diced tomatoes
1 onion, chopped
1 celery rib, chopped
1 carrot, peeled and chopped
2 garlic cloves, chopped
1 Egg wash:

1 tbsp water

Preparation

  • Filling:

    In a medium saucepan, heat the olive oil over medium heat. Sautée the onions and garlic for 1 minute before adding the celery and carrots and continuing to cook for another 2 minutes. Add the beef, breaking it up with a wooden spoon and stirring around until all the meat is cooked through.

  • Plop in the tomato paste and stir in completely. Then add the tomatoes, chili powder, and red kidney beans. Season with salt and pepper.
  • Bring it all to a boil and let it simmer for 5 minutes until most of the liquid has evaporated, then set aside.
  • Dough:

    Combine Black Diamond Original Cheese Spread and butter in a food processor until smooth. Add the flour and salt, and pulse until all ingredients have just combined. A trick to know it’s ready is when the dough holds together when formed into a ball.

  • Divide the dough in two and flatten on a floured surface. Cover each dough disc in plastic wrap and refrigerate for a minimum of 4 hours and a maximum of 24 hours.
  • Finishing steps:

    Gently roll out one dough bundle at a time on a floured surface to form a 10” disc. Tenderly place the first disc in the base of a 9” pie dish and allow for overhang. Refrigerate while you roll out the other disc.

  • Once the second is rolled out, fill your pie with the cooled meat filling. Top with the second dough disc and trim excess crust. Flute the edges. Cut 5 air holes out from the top crust and brush with the egg wash.
  • Bake in an oven preheated to 350°F for 40-45 minutes, or until the dough is nice and golden.
  • Tip: Various ways to flute: use a fork, pinch dough between your thumb, squeeze dough in a gentle snapping motion.

Ingredients

4 large russet potatoes, peeled and sliced into 1/4” rounds
2 garlic cloves, chopped
1 onion, cut into rings
2 tbsp & 6 tsp fresh thyme
1/4 cup ham, cooked and cubed
1/4 cup Lactantia unsalted butter
1/4 cup flour
3/4 tsp salt
3 cups Lactantia 2% milk
1 1/2 cups Black Diamond Light Cheese Spread
to taste salt

Preparation

  • Preheat the oven to 400°F. Butter an 8”x11” baking dish.
  • Spread out the sliced potatoes, creating a base layer at the bottom of the dish, and season with salt and pepper. Top the potatoes with the onion, ham, and 1 tbsp of fresh thyme. Cover this layer with the remaining potatoes and season again with salt and pepper.
  • In a medium sized saucepan, melt the butter on medium heat and gently cook the garlic for 1 minute. Once the butter is melted, add the flour and stir until everything’s completely coated by the butter. Cook for a minute. Pour the milk in slowly, whisking all the while to avoid lumps. Add in Black Diamond Light Cheese Spread, salt, and the 2nd tbsp of thyme and stir until fully melted.
  • Pour the cheese mixture over the potatoes ensuring it cascades through every crevasse, cover the dish with tinfoil, and bake for an hour and 20 minutes. At this time, remove the foil and bake for another 10 minutes.
  • Allow the potatoes to cool for 5 minutes and then garnish the dish with the remaining thyme.
  • Tip: Make these personal-sized by using a muffin tin rather than a baking dish.

Ingredients

1 cup broccoli florets
¾ cup Beatrice sour cream

2 tsp lemon juice
2 tbsp fresh oregano, chopped

Preparation

  • In a pot of boiling salted water, place the broccoli florets and boil for a couple of minutes until somewhat soft. Once your ideal consistency is reached, remove broccoli from hot water and move to iced water to cool down.

Preparation

Ingredients

4 Soft medium flour tortillas
454g lean ground beef
1 package taco seasoning
1 cup water
1 cup salsa
1 package Jalapeño Cheese Spread
1/4 cup cilantro, chopped

Preparation

  • Preheat oven to 375F
  • In a medium non-stick pan, heat the olive oil and brown the ground beef.
  • Once cooked through, add in the taco seasoning and the water and continue cooking for two to three minutes, until the liquid is mostly evaporated.
  • Mix in the salsa and set mixture aside.
  • On a parchment lined baking sheet, place a tortilla at the bottom of the cake pan, and spread 1/4 of the cheese spread and 1/3 of the beef mixture. Top with a second tortilla and repeat finishing with the 4th tortilla.
  • Spread the remaining cheese on the top layer.
  • Bake in the oven for 25 minutes.

Eggplant Tower stuffed with herb cheese spread

Ingredients

1 eggplant, cut into 12 rounds
4 eggs, beaten
1 cup flour
1 cup panko bread crumbs
1 container Herb Cheese Spread
Tomato Sauce
1 small onion, chopped
2 garlic cloves, chopped
2 cups canned diced tomatoes
1 tsp chili flakes
1/2 cup water
1/4 cup + 2 Tbsp canola oil
1/2 tsp salt
1/2 tsp pepper
1/4 cup fresh basil

Preparation

  • Preheat oven to 375F
  • Season the eggplant slices with salt and pepper.
  • Dip eggplant slices in flour, then egg mixture, and finally in panko bread crumbs.
  • Heat the oil in a medium size pan and fry the eggplant slices. Lay fried slices on a parchment lined baking sheet.
  • Once cooled, using an offset spatula, spread 2 Tbsp of cheese spread over all slices of eggplant. Then, using three eggplant slices make a tower.
  • Bake eggplant in the oven for 6-8 minutes.
  • In a pot, heat the 2 Tbsp of canola oil and sautée the onions and garlic for one minute.
  • Add in the canned tomatoes, the chili flakes and 1/2 cup of water.
  • Simmer the sauce for 20 minutes and season with 1/4 tsp of salt and 1/4 tsp of pepper.
  • Set sauce aside.
  • To serve, ladle sauce on a plate, and top with eggplant tower.
  • Garnish with fresh basil.
